As khoya is a multipurpose ingredient it can also be used for preparing different varieties of sweets like&nbsp;<em>barfi, kalakand, peda, halwa,<\/em> milk cake<em>&nbsp;<\/em>etc.&nbsp;Food Safety and Standards\nAuthority of India (FSSAI) is a statutory body under the Ministry of Health\n&amp; Family Welfare, Government of India. FSSAI is the authority to keep\na check on the quality of food and constantly\nmonitors and comes up with guidelines to check that the food is proper and safe\nfor human consumption. Consequently, the <strong>Department of Food Safety, Delhi<\/strong> conducted\u00a0a pilot survey under the\u00a0supervision of FSSAI, where from 31st August to 4th September 2020 they placed Food Safety on Wheels\u00a0(FSWs)\u00a0at Mori Gate Khoya Mandi in Delhi.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Sample Sent to Laboratory of State Food\nTesting<\/h3>\n\n\n\n<p>During this survey, the FSW\nstaff tested the Khoya samples for 3 parameters i.e. Titratable acidity, added\nsugar in Khoya and the maximum added starch. Also a small part of the sample\nfrom the Khoya was sent to the Laboratory of State Food Testing for testing of\nother five parameters i.e. Neutralizer, Urea, Baudouin, B.R. reading and\nDetergent.<\/p>\n\n\n\n<p>Therefore, because of the\nfailure in collecting samples during the pilot survey in Delhi the Food Safety\nand Standard Authority of India announced and came up with the new notification\nfor all the Food business dealers and the Food regulators. <\/p>\n\n\n\n<p>The Food Safety and Standards Authority of India (FSSAI) initiated a nationwide examination across the country i.e. Pan\u2013India Khoya Quality survey. They have placed the Food Safety on Wheels&nbsp;(<em>FSWs<\/em>) for 5 days from 12th to 16th October 2020 in few selected khoya mandis and motivated the Khoya buyers to get their Khoya samples tested under FSSAI on Khoya quality test.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Points Concerning the New Notification<\/h3>\n\n\n\n<p><em><strong>Further, few of the points concerning the new notification on FSSAI on Khoya Quality Testing are given below:<\/strong><\/em><\/p>\n\n\n\n<ul>\n<li>FSSAI on khoya quality test has- with effect from 27th October 2020 facilitated to launch the new standards for the whole country i.e. PAN India testing quality of Khoya.<\/li>\n\n\n\n<li>It is compulsory for the food business operators to obtain the <a href=\"https:\/\/corpbiz.io\/fssai-license\"><strong>FSSAI food licence<\/strong><\/a> or FSSAI registration.<\/li>\n\n\n\n<li>FSSAI on khoya decided the PAN -India Khoya quality survey was decided to be conducted due to some breakdown during the pilot survey and the samples collected at Delhi.<\/li>\n\n\n\n<li>The Commissioner of the Food Safety in all the states and Union Territories has reported to select few Khoya mandis in their particular state and UTs specifically in big cities.<\/li>\n\n\n\n<li>The FSSAI on khoya quality test final results shall be able to know and classify the key hot spots and places where adulteration of Khoya is done in various parts of the country and strengthens the efforts of the states to enforce measures.<\/li>\n\n\n\n<li>Therefore the purpose of the entire exercise of FSSAI on Khoya quality test was intended to ensure the availability of safe and pure Khoya for consumption of safe Indian sweets in our country.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Purpose_of_Testing_Quality_of_Khoya\"><\/span>Purpose of Testing Quality of Khoya<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p><strong><em>The purposes of FSSAI behind testing quality of khoya are given below, which are as follows:-<\/em><\/strong><\/p>\n\n\n<div class=\"wp-block-image\">\n<figure class=\"aligncenter is-resized\"><img decoding=\"async\" src=\"https:\/\/corpbiz.io\/learning\/wp-content\/uploads\/2021\/02\/The-purposes-of-FSSAI-behind-testing-quality-of-khoya-are-given-below-which-are-as-follows.png\" alt=\"The purposes of FSSAI behind testing quality of khoya are given below, which are as follows\" class=\"wp-image-26690\" width=\"552\" height=\"368\" srcset=\"https:\/\/corpbiz.io\/learning\/wp-content\/uploads\/2021\/02\/The-purposes-of-FSSAI-behind-testing-quality-of-khoya-are-given-below-which-are-as-follows.png 626w, https:\/\/corpbiz.io\/learning\/wp-content\/uploads\/2021\/02\/The-purposes-of-FSSAI-behind-testing-quality-of-khoya-are-given-below-which-are-as-follows-300x200.png 300w\" sizes=\"(max-width: 552px) 100vw, 552px\" \/><\/figure><\/div>\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Test_Procedure_of_the_Khoya_Quality_Test\"><\/span>Test Procedure of the Khoya Quality Test<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<ul>\n<li>Preparation of Sample of Khoya \u2013 by grinding the laboratory sample of khoya and preserving or storing it below 10 degree Celsius.<\/li>\n\n\n\n<li>Determination of moisture in Khoya<\/li>\n\n\n\n<li>Determination of Fat content in Khoya\n<ul>\n<li>If the sample shows presence of sugar <\/li>\n\n\n\n<li>If the sample shows absence of sugar<\/li>\n<\/ul>\n<\/li>\n\n\n\n<li>Determination of starch in Khoya<\/li>\n\n\n\n<li>Detection of sucrose in Khoya<\/li>\n<\/ul>\n\n\n\n<p>After going through the sample\ntesting procedure and complying with all the steps given above the FSSSAI\ndecides as to the extent and proportion of adulteration in the khoya.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Conclusion\"><\/span>Conclusion<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>FSSAI on khoya quality test has\ntaken into consideration the results of the surveys and available testing\ninfrastructure. FSSAI has decided to focus on the three areas: continued\nsurveillance, testing and corrective measures for implementing and monitoring\nthe manufacturers and dealers to strictly avoid adulteration of khoya and more\nconsumer engagement. <\/p>\n\n\n\n<p>FSSAI has provided with upgraded testing infrastructure and high end precision test equipment for continued surveillance and for keeping up the rapid testing of the same. Moreover, FSSAI has notified National Accreditation Board for Testing and Calibration Laboratories (NABL) and other public food laboratories for testing, regulatory measures and conducting surveillance that can be used by the states to complement testing.
