Hence, starting the dry\nfruit business can be an excellent and viable business choice now.<\/p>\n\n\n\n<p>The Food category system has been defined\nin the Food Safety &amp; Standards (Food Products Standards &amp; Food\nAdditives) Amendment Regulations, 2016. Dried fruit and nuts come under the\ncategory of processed foods. The FSSAI has defined dried fruits and nuts as products\nfrom which water is removed to prevent microbial growth, including dried fruit\nleathers (fruit rolls) prepared by drying fruit purees. Such as cashew nut,\nraisins, almond, dried apple slices, figs, copra (dried coconut cut or whole),\ndried shredded or flaked coconut, dehydrated fruits, prunes, etc.<\/p>\n\n\n\n<p>In <strong>Food Safety &amp; Standards (Food Products Standards &amp; Food Additives) Regulations, 2011<\/strong><sup><a href=\"https:\/\/www.fssai.gov.in\/cms\/food-safety-and-standards-regulations.php\"><strong>[1]<\/strong><\/a><\/sup>, dried fruits are described as products obtained by drying, fruits, and nuts of proper maturity. The product can be with or without stalks, shelled or unshelled, pitted or unpitted, or pressed into blocks.\u00a0 <\/p>\n\n\n\n<h3 class=\"wp-block-heading\">Conditions that FBOs has to Ensure about Dried Fruits and\nNuts <\/h3>\n\n\n\n<ul><li>It must free from mold, living\n\/ dead insects, insect fragments, and rodent contamination.<\/li><li>It must free from extraneous\nmatter like stalks, pieces of shells, pits, fiber, peel.<\/li><li>It should have a uniform color,\npleasant taste, and flavor characteristic of the fruit\/nut.<\/li><li>It must free from flavor,\nmustiness, rancidity, and evidence of fermentation.<\/li><li>It must free from added\ncoloring.<\/li><li>Stored it appropriately to\nprevent contamination and growth of toxic microorganisms<\/li><li>Free from blemishes, discolored\nand damaged nuts (caused by sunburn, scars, mechanical injury discoloration,\nand insects) must be removed to prevent contamination.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"What_do_you_mean_by_Dry_Fruits_and_Nuts\"><\/span>What do you mean by Dry Fruits and Nuts?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Dry Fruits and Nuts are the products\nobtained by drying the fruits or nuts in their proper maturity form. The\nproduct can be with or without stalks, shelled or unshelled, pitted or\nunpitted, or pressed into blocks. <\/p>\n\n\n\n<p>The product must be free from mold, living \/dead insects, insect fragments, and rodent contamination. The product must be uniform in color with a pleasant taste and flavor characteristic of the fruit\/ nut-free from off-flavor, mustiness, rancidity, and fermentation evidence. The organization works to implement and monitor the sale of\neatables in India. The FSSAI lays down guidelines and standards for the sale of\nsuch items. It helps in preventing a sale of sub-standard food items and\nprevents food adulteration, contamination.<\/p>\n\n\n\n<p>The FSSAI registration serves to assure clients that the food you serve is nutritious, healthy, and safe to consume. The body regularly inspects and performs quality checks to ensure that food businesses follow stringent safety guidelines. Everything from the handling of a food item to its packaging comes under scrutiny from the FSSAI.<\/p>\n\n\n\n<p>All food-related businesses, from restaurants to grocery shops and dairy farms, need to obtain the appropriate <a href=\"https:\/\/corpbiz.io\/fssai-license\"><strong>FSSAI license<\/strong><\/a> to operate in India. Not only does it improve the quality of products sold in the country, but it also ensures food safety and security.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Why_the_FBOs_need_to_ensure_Hygienic_Practices\"><\/span>Why the FBOs need to ensure Hygienic Practices?<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Contamination can occur at any stage during\nprocessing, handling, storage, and distribution, so FBOs must follow good\nhygiene practices in accordance with <strong><em>the Schedule 4 of FSS Act, 2006<\/em><\/strong>. The\nfact that FBOs are operating as FSSAI licensed processors serve as an insurance\nof their intent to follow all FSSAI guidelines for running their dried food\nbusiness.&nbsp; <\/p>\n\n\n\n<p><strong><em>However, acceptable hygiene practices entail FBOs\nensure-<\/em><\/strong><\/p>\n\n\n\n<ul><li>Raw fruits used for preparing\nthe dried fruits are free to form chemicals, pesticides, and enteric pathogens.<\/li><li>Hygiene and sanitation\npractices are maintained throughout this process.<\/li><li>Only potable water has to be\nused during processing to prevent microbial contamination.<\/li><li>Any desiccation during\nprocessing has to be carried out with proper equipment that is sanitized after\nuse.<\/li><li>To maintain specified thermal\nconditions, the fruits gets dehydrated correctly in order to maintain shelf\nlife.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\"><span class=\"ez-toc-section\" id=\"Packaging_Labelling_Requirements\"><\/span>Packaging &amp; Labelling Requirements<span class=\"ez-toc-section-end\"><\/span><\/h2>\n\n\n\n<p>Dried fruits are prone to contamination if\nthey come in contact with moisture, so proper packaging protocols must be followed\nto ensure food safety.<\/p>\n\n\n\n<ul><li>The use of food-grade packaging\nis important as dried fruits come in direct contact with the packaging.\nPackaging has to be safe and not cause chemical contamination. They will be\nable to keep moisture out of the packaging.<\/li><li>FBOs need to keep in mind that\ncertain dried fruits and nuts, especially peanuts, can cause allergic\nreactions.
